Looking good.  I have a fry baby similar to yours.  I really like it for frying smaller batches of fish

yes does a great job for smaller fries!  They were very good

Those fillets look great!  I'm a rather messy cook and mine always seem to have bare spots on them despite coating them in milk/egg and dredging them in mix.  How do you get the breading to stick and coat them so evenly?

I usually let them soak in egg for a minute or two, flip the fillets and soak another minute then once I put in cracker crumbs I try to get them in the fryer pretty quickly and they usually come out looking beautiful and evenly coated:) your batch looked good by the way!
