did some experimenting today with deer roasts. have a couple left in freezer to eat up.  i cooked up my rosemary brine and put both roasts in it.  i ussualy brine 24-48 hours depending on size.  i took the small roast out about 4pm(went in at 730am). i then cooked up a small batch of injection liquid.  water sugar dales garlic powder and smoked paprika. i injected the roast and put it in fridge on a plate till 530. i pulled it out and coated it with montreal steak seasoning then got smoker rolling at 225. kingsford and lump mesquite was the heat.  i smoked it with heavy smoke till it reached 135*.  set to rest 20min. then i layed into it.  ate 3/4 of it and am still nipping at it. lol its almost as good injecting it, but not quit, as just brining it for 2 days. next time i need one in short order ill be doing this. maybe try this with a beef roast over the weekend.

roasted a green pepper with left over coals to go with.

day off tomorrow. there gona be a tree rat massecreeee in the mornin!!!!!  season opened today. fried rat for dinner tomorrow. also get to check on the shrooms i found popping sunday. been picking chants and oysters around here.

? for you tree rat eaters. do you age them in fridge several days?  i came accross a vid of a guy aging them.  i never have.  i wonder if it makes them more tender or flavorfull?

Looks and sounds great!  For the tree rats: I've prolly eaten enough over the years to fill the back of my pickup with. Never aged them; so I don't know. Can't see where that would make 'em any better. I always ate them the same day, or the next. Know lotsa guys would soak 'em in milk overnite. I usually tossed mine in the crockpot with carrots, taters', onions, mushrooms and rosemary and maybe a bay leaf or two. Can add some chicken stock or broth for more flavor. Or dump in a can of whatever cream of soup ya like mixed with a half can of milk. Slow covered pan fried after rolled in peppered flour with some spices is good too. I found oven baking 'em tended to dry 'em out. Toss the old bucks with the big nuts; those chewy, gamey things my dog wouldn't even eat!

I never age squirrels either.i mostly  make squirrel stew with them.i cut up onion,potatoes,carrots and onion and buy a packet of beef stew mix and cook the squirrels in butter and flour then toss it all in a crockpot.nothing fancy here.

Ya want a real treat, if ya can handle it....cut open that skwirrels gut or pouch in Fall...it'll be fulla ground up fine whitish nuts. Take that out and let it air dry in the sun on a piece of paper. Old timers would then sprinkle this on tops of cakes, cookies, etc. And yes, I did do this once. In this day and age, guess I wouldn't advise it. Ya might get skwirrel pox.  :pinch:

I used to have them at the State Fair and the Renaissance Fest here. Great if they're made right.

the big roast came out of the brine after work today.  she went in the smoker at 3.  beer and mesquite chunks till we hit 130* ;D

runnin at 200*
couple trimmed chunks im gona take all the way to jerky town and see what i get.

 Some dishes we make extra , 1 for table 1 for the freezer in case nobody feels like cooking , tonight it was freezer goulash
