Does anybody else fillet the cheeks?  Waste not, want not.

here's a link to a forum which has a youtube video on removing the wings. I like to cut mine in half so there is one fin and cook it like a chicken wing since there is a piece of cartilage between the meat that's attached to the fin. IMO they are better than the cheeks since you get more meat and they aren't as rubbery.

not alot of guys remove the wings so sometimes when your in  the filleting shacks guys will give you theirs and 4 fish make for 8 walleye drumsticks that serves up great as a meal appitizer.

 I usually remove the meat from the fins and get a couple sorry looking scraps, definitely going to try the wings whole like that next time, make the breading a little spicy and dip it in wing sauce.

I always save the cheeks in a bag in the freezer. Then when I accumulate a good amount and company comes up to the cabin. I cook them as a side for breakfast. Goes great with Bacon or Sausage and Eggs. :)

I saw a guy cutting the "wings" off of a bunch of walleyes at the fishing cleaning station once.  Thought he had been drinking too much! lol  Maybe I will have to try then next time.  ALWAYS take the cheeks.  Love them!

If you don't take the wings, your crazy. The meat is sweeter than fillets, and if you deep fry them, the fins are like potato chips.
