Nice to have in the oven after a day on the ice....
One 3 lb pork butt roast
1 can of apple juice concentrate
1/8 cup of heavy maple syrup
Rib Rub or good pork rub
Thick sliced smoked bacon
Mix half of the can of apple concentrate with 1 to 1 1/4 cups of water. Re-freeze and keep rest of concentrate for next roast. Trim roast of any fat if necessary. Put in ziploc bag with apple concentrate and marinate overnight in 'fridge, turning occassionally.
Remove roast, spray or rub lightly with oil; sprinkle with rub or seasoning. Lay slices of bacon horizontally over the top for the length of the roast. Place in glass baking dish in slow oven (325), pour small amount of marinade over roast, cover with foil. Cook for one hour, uncover, brush roast and bacon with maple syrup. Return to oven for 45 minutes to one hour longer, or until roast reaches internal temp of 160-170. Remove and tent with foil for 10-15 minutes; serve. Enjoy!
