You've got me thinking now...... For chicken strips, we use yellow mustard (instead of egg or milk) and then roll them in flour. I bet you could use Franks Red Hot instead of mustard. If you try it let us know--

Y'all got me to thinking.  That's dangerous I know.  I use a product called Rocky Madsen Fish Crisp.  it is a dry mix that you dust the fish with, kinda like shake & bake. I dip the fillets in egg and then roll 'em in the dry mix to get more of the mix to stick.  Now if one would spike the egg wash with tabasco or Durkee's red hot I think the result would be favorable.

I saute the panko crusted fillets in olive oil and get them nice and crispy.
While the fillets are cooking in a sauce pan add:
1 table spoon of butter
1/4 cup of olive oil
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon of chopped garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup hot sauce

Mix thoroughly and simmer  on medium heat for about 5 minutes.
I use a small bucket with a lid, add the cooked fillets to the bucket, pour the sauce in, replace the lid and give it a good shake.

This  sauce recipe came from a local eatery with the best wings in town! Bon Appetite!

I was given a recipe this summer and have not used it on perch( have used with walleye, redfish and shark) it is now my absolute favorite.
The very simple recipe goes like this;
1 bottle Franks Red Hot
1 large zip lock bag
1 pack Hidden Valley Ranch
And a  dry breading of your choice( I use cracker meal and flour)

Cut fillets into bite size pieces, place into bag, put enough Franks in to completely coat the fish.  Marinate for 15 min to 3 hours(longer time gives more hot sauce flavour).

Mix the Ranch in with the breading and coat fillets, then deep fry.
This is a definite 2 thumbs up meal.

so i got me a bottle of franks red hot buffalo wings sause (i like it on wings) and i just plan on putting a little bit of it my egg when we mix it up then coat fish in egg and redhot, then coat in flower/seasonings, fry in oil cool salt eat.. should be pretty good if not i need to get some plain wings to coat in franks..

also you could coat fry and then put them in a platic container with a lid and some franks and shake an coat like the wings..
