Maine Shrimp Etouffe

With Maine Shrimp season almost among us here, I get tons of Maine shrimp from the local lobsterman. They're great for peel and eat, however here is my knock-off of the Louisiana classic crawfish etouffe substituting Maine Shrimp. Had A line at my shanty last year when I cooked it up on the ice. (If you're real clever you'll make a stock from the shrimp heads, if not chicken stock or low-sodium chicken broth will do).

3 stalks of celery
1 Green pepper diced
1 red pepper diced
1 onion diced
3 lbs Maine shrimp peeled
2 tbs whole butter (don't use that fake s**t!)
1 tbs bayou or cajun seasoning
1/4 tsp cayenne pepper
1 tbs corn-starch
1 cup cold water
2 cups shrimp stock (or low sodium chicken broth)
salt and pepper to taste
2 cups cooked long-grain white rice (hot)

melt butter in a large skillet or frying pan. Add onions, celery, and peppers. Cook until onions are translucent, season with salt and pepper. Add cayenne, cook additional 2 minutes. Add shrimp and bayou seasoning. Cook for 2 minutes. Add chicken stock and bring to a boil. reduce heat and simmer five minutes ubtil shrimp are cooked trhough. In a cup combine corn-starch and cold water until well blended. Slowly stir in the water/corn-starch mixture (this will be the thickening agent). Bring back to a simmer for an additional five minutes and serve immediatley over hot rice with plenty of french bread :-)

thats alot of maine shrimp to peel, but its worth it for the flavor. those are some sweet tasting shrimp

worth it to spend the extra cash and buy them peeled :-) however they make a good good old bay shrimp boil with potatoes, sausage, and hotdogs...good stuff.

worth it to spend the extra cash and buy them peeled :-) however they make a good good old bay shrimp boil with potatoes, sausage, and hotdogs...good stuff.

price in mass jumps from 3 dollars to 13 peeled, that was last year. havent seen them yet but havent looked

Until I saw a new article about limits on the Maine shrimpers,..I didn't know there was a maine shrimp fishery!

Is there much/any difference in Maine shrimp compared to southern shrimp.  (southern waters lobster isn't worth eating to me)

they are very sweet tender and.... small ;D they are better than pretty much all shrimp but can be alot of work, theres probably 60/70 per pound. its a quick season, by the time they get down here there is only a few weeks left. heres some before cooking, notice the bright color
