CREAMED EGGS ON TOAST

Here’s a blast from the past, for those who remember grandma’s creamed eggs on toast.

What you will need:
12 hardboiled eggs
3 cups of milk
4 Tbs butter (1/2 stick)
¼ cup of flour
1 tsp Worcestershire sauce
½ tsp onion powder
½ tsp garlic salt
½ tsp black pepper




Separate and coarse chop egg whites, then fine chop egg yolks.




Melt butter in a large frypan on medium heat. Sprinkle melted butter with flour. Stir and cook the mixture for several minutes until flour smell is gone.




Slowly whip in milk to avoid making lumps. Add seasonings and Worcestershire sauce.




Whip in finely chopped egg yolks and simmer until thickened.




Gently stir in coarsely chopped egg whites and bring back to a simmer. Then remove from heat.




Serve over toast. Salt and pepper to taste.

Blast from the past indeed! Don't forget the kissin' cousin, dried beef on toast with that same white gravy stuff. Often topped with chopped hardboiled eggs.
