Here is a recipe for what you are looking for:
Ingredients:
Flour
Spices
1. combine ingredients and blend well
2. Bread and fry fish
3. Enjoy
But seriously what kind of spices do you like?
I like to use 1/2 corn meal and1/2 flour. Then use what ever seasonings you like. Paprika, dill, whatever you like.
Some of the prepared cajun seasonings are good. Experiment and you will find what works for you.
I often make up a batch of Emeril's essence and just use that with the flour and cornmeal.
Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup

although we're not into hotttt spices, we first tried emerils essence a few years ago and found it lacking a little punch. so my wife played around with a few spices and found horseradish powder (very hard to find item) and kicked it up a few notchs so to speak ;D ;D we use it on so many different foods and wouldn't be without it. as far as fishfries, we use cornflake crumbs alot after dipping filets in eggwash and deep frying in peanut oil on high heat. grumpymoe

my best half made the recipe from scratch. i'll tell you, that horseradish powder really kicks it up. :o :o :o :o

Like to roll em in that spicy 'Shake and Bake' once in awhile.

I use Kentucky Kernel Flour. It has just the right amount of spices for me. Not too much breading, etc. Brian

let your imagination run wild. I use a saltine cracker/flour base and then head to the cupboard to see what we've got up there. I little of this, a little of that, don't forget some black or lemon pepper. Boom!

Lately I've been making my breading out of corn flower, with a good amount of cyan, Creole seasoning, garlic powder, and oregano.

does corn flour taste better or is that just a matter of what's in the cupboard?

While using some store bought breading I noticed that corn flower was the main ingredient. I had some in the cupboard so I started to experiment with different seasonings.
