What to do with smoked fish?

What are you guys doing with your smoked fish? I have about 3 lbs of smoked silver bass coming out of the smoker tonight. This is my first time smoking fish so hopefully they turn out! For the species we have around here I heard carp or silver bass was the way to go. Anyway, what all can I do with my smoked fish? All I know of is mix it with some cream cheese and spice and put it on crackers. Is there anything else I could do with it? What do you guys do with yours usually?

I just eat it plain and wash it down with a cold clear Canadian beer.  ;D

Use your favorite recipe for tuna fish. It makes a great sandwitch.

I smoke goldeye and whitefish. Mix with mayo and eat on crackers, in sandwiches, or just as it is.

mmmm....smoked fish.  I eat it like deli meat; plain, sandwhich, on crackers, crumbled into a salad....

I find when I have a bunch of fish to process, usually white bass, I'll filet them with the skin and scales left on. Brine them over night. Rinse very thoroughly the next morning. Then I'll smoke them over hickory for only 45 minutes to an hour at 180 degrees. The the skin peels off very easily. I break up the pieces into pint jars and add 1 Tbs ketchup, 1 Tbs vinegar, 1 Tbs of Canola oil, and pressure can at 10 lbs pressure for 90 minutes. Now I have smoked fish I can keep almost indefinitely.

6-8 ounces smoked fish, meat chopped in coarsely (so as not to burn out the motor on your food processor!)
1/2  block neufchatel cream cheese
2 jalapenos
juice of one lime
1 tablespoon old bay seasoning
1/4 cup mayo (or less, depending on how wet your mixture is and how well it is blending)
salt, pepper to taste
Puree ingredients in a food processor until well blended.

If it is a firm flesh, you could substitute it for smoked salmon in one of my favorite pasta recipes. 

Saute thinly sliced small onions (or 2 or 3 shallots) and a finely chopped clove of garlic in olive oil.  When halfway done, add smoked fish.  After 3 or 4 minutes splash 1/4 cup vodka or brandy and let alcohol evaporate.  Add 1 jar of tomato puree (plain sauce), salt, pepper to taste.  Bring to a low boil and turn down flame to let it all thicken.  When ready (about 30 minutes on very low), add 1/2 cup heavy cream, gently stir in.  Serve over thick spagetti or linguine with a soft cheese such as "salted ricotta" coarsely grated over the top.

one block cream cheese garlic powder chives smoked fish.mix well and pepper to taste. great stuff for cracker when watching a nascar race.
Take a kid fishing,they make great pack mules.
Put the big ones back for another day eat the small ones.

I'm not to fancy and tend to eat with my pinky tucked in so I normally put my smoked fish on a buttered cracker and down she goes. Wash it down with a Coors.

My brother in law (PA Shanty ) makes a mean smoked trout dip:
cream cheese, sour cream, old bay seasoning
salt, pepper to taste and wash it down w/a frosty one.

I usually use cutthroat but I'm sure any fish will do...after brining and smoking I just cut the fish in small pieces....arrange on a plate with chopped red onion,diced tomatoes,diced hardboiled egg,capers,and set some creamcheese on the side with triscuit crackers of some flavor.   Place the whole mix infront of friends and family, and watch it disappear!

I just fry or grill for those. Fish tacos with shredded cabbage, cilantro/chipoltle sour cream sauce, lime juice and avocado slices all on a crisped corn tortilla.  It's probably hard to find fresh citrus and veggies up in Yellowknife? I know it's expensive in Montana ;D

Lake trout is my favorite smoked. Just have some good sized filets with the skin on and vacuum pack it for future use.

for a white fleshed fish you can make a soup might even consider it a chowder

peel and cube a few potatoes and dice one medium sized onion
soften onions in butter in a large pan of your choice then add  the potatoes and fill with whole milk till tatoes are covered
cook tatoes in milk till almost done the add the fish and simmer until tatoes are full cooked
remove skin from the fish if its still on it then flake up the fillet finish with a sprinkle of real bacon bits

its very simple and extremely tasty

smoked fish with the skin, bones and mudline removed.    flaked into a good sized bowl to double check for bones.    mix with sour cream and miracal whip, old bay seasoning, diced onions and garlic for a spread over hard crackers or hard bread.

a bit thinner for ''tuna salad''.

mixed with other fish (tuna/salmon/etc), eggs, cheetos (or buttery crackers) crushed and baked into a fishloaf instead of hamburger (meatloaf).   slice and reheat in a fry pan with eggs and taters if there's any fishloaf left over.       some shreaded cheese in the loaf also helps hold it together.   makes a great sandwitch.

use instead of tuna in a macaroni salad.

mixed with a bit of crumbled, pre-cooked,  bacon and eggs makes a really good sandwitch on a buttermilk bisket with a slice of cheese, shot of hotsauce and/or glob of salsa.

never be afraid to experement when cooking.    if the kids, dog or cat won't eat it, you can always put it in the live trap in the back yard to catch coon, skunk, possum and the neighbors cat.

I catch a few salmon every summer and fall. When I have 4 or 5 nice ones in the freezer I smoke them up and then I fire up the pressure cooker. Plenty of smoke outside and steam inside. Nothing like smoked canned salmon in the middle of winter. Nice thing is that you don't have to bother with catching fresh fish and smoking them when you want smoked fish. Just pop the lid open a beer and you are in heaven.
