Favorite Fish Batter
« on: Jan 03, 2010, 10:27 AM »

Okay fellas, whats your throw down best fish batter mix or recipe?

I go for Fish Crisp every time.  Even if I have to drive to Winsor and get it.

i like the uncle bucks from bass pro shops. light and crispy. but my favortie way to cook it is baked with ritz crackers and itialian bread crumbs, spread melted butter over the fish after they are breaded, put some itialian seasoning on it maybe a little garlic powder i love seasoning so i put allot on. then bake at 500 degrees for about 25 min very healthy and very tasty.

my trick is everglades seasoning.  my buddy brings it up from Florida.  I either mix it in flour for a quick dredge or with flour and beer for a wet batter.  I guess I know what i'm having for lunch...

Hey Fowler, do you just mix up the ritz and the IBC 50 50.  This sounds awesome!

Drakes or shore lunch are both pretty good. Ritz crackers is a close third.

On light tasting fish like perch and walleye.......PANKO is the way to go!!! (Used on Japanese Tempura) Very light and Flakey-and wont mask the clean flavor of fish thru the ice!

Andy's Red,  not the Cajun, dry coating mix.   Shake in baggie let set till moist throw in fryer.

I got Panko on my shopping list though.   Merliton dressing not fillets though.  Well maybe crappie fillets in the dressing.

I like to use Chinese Panko bread crumbs. Dip them in an egg and milk wash first then dredge them in the Panko bread crumbs with a few other secret ingredients. The Panko crumbs add a really nice crunch to the fillets!!

hey solman i usually put more ritz crackers in than itialian bread crumbs but that is your choice. This is something that my mother made almost all the time when we had fish and it was always good, and VERY healthy you dont here to many people baking fish almost always fried
