Pike Fishing

Two years ago, I had a large bait on a tilt, the flag did not trip, but when I went to pick up for the day, the bait was ate from tail to hook.
Yesterday, with 20 yards of when the incident happend 2 years ago I had the same thing happen, TWICE, on a large sucker and then on a needle nose pickerel....
Is this a very large pike? Old mature with some sensibility? I hook by dorsal fin or head with good luck, should I try some quick strike rigs or make own with a two hook system?

Most likely a bullhead chewing away at the bait little by little over the course of the day.

If this is at quabog than I 100% believe it's a bullhead. That place is almost paved in those things
