usually bake my trout with a veggie chutney.  Salmon is grilled, baked, broiled, smoked, jerked, chowdered, canned, patties, etc... etc...  Halibut- baked, grilled or deep fried.

I fry my fish in a butter/bacon greese mix. It adds depths of flavour. I also like to mix up th spices in the crumbs, or try differnt types of crumbs. gotta mix things up

same old coatings get boring as Icejunky posted....gotta keep things mixed up.....breadcrumbs, crackercrumbs and anything else crumby keeps the taste buds going fulltime.....and dont forget to double dip the fish in the crumb mixture for extra crispiness.......just dont overdo it....Yummmmmmmmm..... Sometimes simplicity is the finest, roll them in flour and toss them in! ;D

The smoke from a campfire or charcoal grill can be the ticket too. I like grilled fish best, although it can be challenge to cook. :-\

Ransome showed me a kick ass way of coating 'em last year.  Crushed nacho-flavoured Doritos... who'd a thunk it, but crappie and nacho cheese go hand and hand.  Try it some time, it's quite good.

I agree..I like to use diff. potato chips too. Either straight or mixed w/ bread crumbs. Esp BBQ chips. Gives things a diff taste.

You can still enjoy fried foods by using cholesterol free canola or soybean  oil instead of bacon or butter!! 8)

Try coating fillets with egg then with instant potatoes.  It's great for pan frying and offers something a little different than the usual coatings.
