Hashbrowns

3-4 Cups cooked shredded potatoes
1/2 C shredded cheddar cheese
1 cooked hot dog chopped or chopped ham (about 1/2 C or so)
1/2 C chopped onion (optional)
1/2 C chopped green pepper (optional)
salt and pepper to taste
3 to 4 scrambled eggs
olive oil to grease the skillet

In a greased skillet, add potatoes, onions, and greeen pepper. Mix all together and add salt and pepper. When hashbrowns start to turn a golden brown, add the hot dog or ham. Cook a few minutes longer to brown the meat a little. Turn down to low heat. Pour scrambled eggs on top. Cook as you would scrambled eggs. As soon as eggs are cooked through, top with shredded cheese and allow to melt.
