I have a giant...what I was told...."Swamp" Maple in my yard. Can you make syrup from that? I really want to try making syrup but don't really have any access to maples.
Tap it! Just the sugar content will be a little lower. I wouldn't put more than four taps in any tree but that could still yield you a gallon of syrup over the course of a normal season.

What are the drawbacks to tapping trees too early? For example, we may be a couple of weeks away from the sap flowing, but I'm off this weekend and was thinking about heading out with snowshoes to put some taps in. If the taps are in two weeks before they should be, what is the result?-Ron
I don't have an evaporator, but am looking to tap some trees to use the sap instead of water to brew some beers and wine. Anything I need to look for? Is there a way to gage how much sap I would get from a tree? I don't want too much (waste), but want enough to do brewing using the sap as the sole base.
One tap should yield 10 gal. of sap in a normal season as a guide.
