What is your favorite oil for deepfrying fish?

Just curious if people have a favorite oil for frying fish.

If I had it my way I would use bacon grease.
But now my wife only let's me use peanut oil... :-\

Peanut oil. You can get the oil much hotter without burning it, frying you a lot more fish

I use coconut oil these days when I fry just about anything. You have to pay a bit more attention to temps and get a good organic brand to get the best from it. Food fries better with far less absorption.  It's comparatively expensive, but I don't eat much fried food anyway.

Most deep fryers are this, which is usually soybean/ canola (rapeseed) blend.  that will give you the traditional fried food restaurant taste.

Haven't tried coconut, but i bet that is great especially if you are going panko crusted and want a lighter overall feel/taste. 

Bacon fat is obviously great but is tricky temp wise. My restaurant we only regularly fry home fries.  we pre fry boiled potatoes in veg oil blend, then refry in bacon pure bacon fat before serving (yes they are amazing).

I've always used peanut oil for deep frying.  Mostly we coat walleye fillets with Italian breadcrumbs then pan saute(sp?) in a little olive oil.  When we deep fried a lot we were getting the peanut oil from Gordon food service by the gallon.

Duck fat. I save the drippings when I cook duck breasts. Not a lot of quantity. I set my small cast iron on the burner tilted and cook small batches.

Peanut oil for fish.
Butter for the onions and hash browns and eggs.
Which is probably why I take medicine for high cholesterol levels! ;)

Do you get any coconut taste to the fish? I don't like the taste of coconut.

I've used canola when I can't find peanut oil.

If im going to deep fry it..regular ol canola oil ..pan fry bacon fat is the way to go..i fru everything in bacon fat especially any wild game...its a wonder i havnt had a heart attack yet lol

I've been using the cheapest oil I can find on the shelf at the grocery store for frying fish, and it's usually vegetable oil. 

I think the key to frying fish with any oil is regulating the temp.  If you can keep the oil hovering around 375°, you'll be fine.  Some breadings like Shore Lunch seem to taint the oil quicker than others.  I've been using Andy's breading for the last 5 years, and it works and tastes great. 

I've never tried peanut oil or coconut oil.  Will give them a try in the future.

Pretty sure it was you who pointed that out to me a while back. It ended the existence of canola oil in my house.

Canola oil is def not the "natural" choice in any way, though it does get marketed as healthy due to some of its attributes. Peanut oil which someone mentioned is a good, though more expensive, substitute that many chicken wing places swear by.

Lard.  A buddy of mine had 5 hogs slaughtered last month, and nobody wanted the leaf fat.  I rendered that stuff down in a crockpot and now I have over a gallon of pure white leaf lard in quart mason jars.  In addition to awesome biscuits and pie crusts, it is awesome for frying fish (and seasoning my cast iron).

I usually just use vegetable oil.
With any deep-frying  you need to keep the oil hot.
Otherwise your batter will absorb the oil and it's not nearly as good.
It'll be oily and soggy.
I use a Dutch oven and keep a good dial thermometer in it to monitor temps.
I can do fairly large batches in it which is nice.
