Tortilla,Blew Cheese, perch, Avocado, lettuce, tomato, salsa, sharp cheddar.

I'm not sure that's real. These things are pretty easy to fake. Could you post a YouTube link showing yourself actually eating this so-called perch taco? Please don't try the excuse that the evidence has somehow "disappeared".

My apologies for the unappetizing comment, The door, however, was open.

I'll often use leftover fish to make a "breakfast" taco with fish, some extra seasonings (I like jerk), one egg and your cheese of choice. Roll it all into a warm corn tortilla(s) and get on with yer day!

If your inclined:

1.) Get your tortilla(s) warmed up with some oil and set aside, crank up the pan and add your fish, extra seasoning (if desired) and some oil (I've been using bacon or ham grease  ::)).

2.) When your fish is heated thru, lower the pan to med-low, crack an egg (I'll add some more black pepper at this point) and fold until just cooked.

3.)Add your grated/crumbled cheese of choice and fold in until just starting to melt.

4.)Pour the whole works into your tortillas, top with whatever moves you (salsa, ketchup, ranch dressing, sour cream alone or in combo).

Done! Have a nice day...... ;D

Been making them almost the same as you,minus the blue cheese and perch. Crappie fillets instead and I like stuff spicy,a big squirt of sriracha hot sauce.
