I went and tried crappie fishing for the first time today for a couple hours and caught 7 one of those being a 14 inches!! I'll be going back this weekend :)

So is pickled filets like marinated and preserved filets? Too be honest i never have seen or heard of it besides pickles. So after you take it out of the jar then how do you cook it? Bake or fry? Looks really good but I'm completely un educated on pickled anything.

Oh my....what a sheltered life you've lived Steve.

The pickling solution "cooks" the fillet pieces as they cure. It's  ready to eat as is. I pickle lots of foods. Pickles, green tomatoes, cauliflower, peppers, cukes, fish of all kinds, sausage, venison....I've even done some rabbit.

Love pickled foods. I don't pickle eggs though. They just don't come out right, if you get my drift. Actually, upwind of my drift would be the safest place to be :sick:

Love the pickled green tomatoes and the peppers.  I add some jalapeno to each.  Bread and butter pickled cukes are good with a little heat also...

I like to use either Serrano or Hungarian banana peppers. Heat is good.

i also love pickled foods,as for fish it is the best way to eat herring and some other fish
check HARDWATER CUISINE date 1/24/12 it has a good one for pickling fish

The only "crappie" sausage I've ever had the pleasure to try was at the college dining hall  ;D :sick:

I believe there was a spelling error. That's Crappy dining hall sausage. I started by making perch sausage a number of years ago. I likes it so much that I've tried it with blue gill, walleye, bass and crappies. Each has its own qualities, all are really good tasting. Way better than chemical fed Jimmy Dean.

I've done a lot of funky stuff with perch. Never tried making sausage from them. '

Found it.

6 cups coarse ground perch fillets (or crappies etc.)
1/4 cup Parmesan cheese
1 whole egg
3 tsp sea salt
2 tsp cracked pepper
1tsp cilantro, parsley, chervil, marjoram
2 tsp sugar
1/4 cup canola oil
1/2 cup seasoned Italian bread crumbs
1/4 tsp nutmeg
1/2 tsp cayenne pepper

mix well, stuff in 21mm casings (I use Collagen casings...easy)

Pan fry...enjoy.
