Pickled Pike

We are getting ready to make some pickled pike for the first time. The recipes that we have seen do not specifically call for a hot water bath. We are just planning on doing the pre soaking and then packing in pint jars with the appropriate brine and then refrigerating for 30 day's. Does this sound correct?

I would not do that, as i believe you have to pressure cook at 10 pounds for 1 1/2 hours to insure its safe....yeah i know some do it...it still remains unsafe.

Lots of good recipes on the web. I use bluegill and crappies. No need to cook them if they have been frozen. just made 17 pints tonight
