Home-made tartar sauce
« on: Mar 01, 2015, 01:21 PM »
There is not a thing wrong with most store-bought tartar sauce, except for the high price of $ 2.50 fir a small 12 oz. jar. I read the ingredients and realized it is mayo with several things added.

I made my own today and am now done paying for store-bought. I may be missing a few minor things, but my sauce was

1.) Real Mayo
2.) Finely chopped dill pickle
3.) Lemon Juice
4.) Horseradish
5.) Small dash of brown sugar

I've always made my own. Salad dressing (or mayo), sweet relish, dried chopped onion, parsley flakes, celery salt, dill weed & lemon juice.

Our favorite is 50/50, Dill relish, Mayo. Perfect compliment to Italian breaded fillets.

Relish= easier but I liked a well chopped Dill better. I Usually use a smidge of pepper and some Worchestershire sauce instead of horseradish.

My best tartar sauce,

1/2 cup Kraft Miracle Whip
1/4 cup Vlasic dill relish
2 teaspoons dried, minced onion
2 teaspoons half & half
1 teaspoon dried parsley flakes
1/2 teaspoon lemon juice concentrate
10-12 capers (small), minced
1/8 teaspoon sugar

Mix ....don't cream it!
Make it and let it set for a few days in an air tight container.

we used to use Miracle Whip until we noticed it has high fructose corn syrup in like many foods we used to eat does. i think they know we know now and starting to not use it in as many food items. its crazy how many foods has this garbage in it now.

i just use malted vinegar with fish being mostly english. thats how they eat fish and chips. tastes great and mush better for you.

when some one here wants it, we make it with mayo.

Mayo with sweet pickle relish and a touch of old bay seasoning.   Quantities to taste.

I use malt vinegar also. It's even good on French fries and eggs.

I grew up on Miracle Whip and my mom still prefers the flavor of it. I'm a mayo guy because I can control flavors better. If I want more "tang" just splash in some citrus.

Regarding HFCS: It is not intrinsically "evil". It's only sugar, nothing more or less. The real issue is that many of us get too much sugar, whether it's HFCS or otherwise. Temper the intake and it's really no different than any other natural sweetener (and it is natural).

Back on topic. I've never been much into tartar until I started grilling salmon. In the event anyone is interested here's a nifty twist that really stands up and adds to the already imposing flavor of salmon....

Chipotle Tartar Sauce

Ingredients

      1 TB   Olive oil
      2 tsp   Chopped garlic
2        Chipotle peppers; seeded,-diced small (or ¾ tsp. ground)
1 cup  Homemade or prepared mayonnaise
      1 TB  Chopped green onions
                Juice of 1 lemon
                Salt to taste
                Freshly-ground black pepper to taste
To fish or not to fish? That's a stupid question!
