Been Doing Some Meat Processing

Here is a picture of deer pepperoni sticks and salami on the smoker, and some homemade kielbasa sausage that has been pulled off the smoker, had a couple more, but was eating one and gave one away.  Sure enjoy this time of year and being able to put snacking meat in the freezer.  I have also done quite a bit of jerky.  Will have good snacks for the ice.

Wow!! Those look great! Do you mix any other fattier meat with the deer for the pepperoni sticks?

I added some beef fat.  I have a friend who has a custom meat cutting business and can get fat from him to add to the pepperoni and salami.

I'm trying to get a much bigger smoker for doing this.  I may have found one with hanging racks.  keeping my fingers crossed that I can get my hands on it.

The best smoker I ever seen was made from an old refrigerator, lots of room and the temp outside doesnt effect it at all

I like my jerky getting a little smoke in it.  I have made jerky using deer, antelope, elk, duck, and some beef this fall.  Should be sitting good for eating jerky while on the ice.

IDbasser, what kind of wood are you using? I always liked a mix of apple and hickory, once in a while throw in some cherry. Apple seems to sweeten things up a bit.

I mostly use apple but used hickory on this.  Mostly depends on what I am doing.  I love pecan wood too.  In my stick burner I use mostly apple because it is easier to get.

Looking good.  I smoke a lot of meats, fish and sausage too.  What are you using for a stuffer?

I have a vertical stuffer from LEM.  worth every penny.

I have more to do this week.  will be posting pics by the end of the week.
