There is not question which one I would rather eat...got a nice button buck with my bow earlier in the season, you can cut those backstraps with a butter knife! ;D

I got a small doe also so I have meat for ice time just made a batch of snack sticks yum congrats to all who got deer this year

Figured it was getting close so I decided I would poke my head onto the iceshanty to see whats going on. Looks like everyone is gearing up for the season. Hoping for another fun year like last year. Been busy in the deer woods myself got freezer full of venison to share with the crew on the ice this year. Even made some venison sausage bratwurst for the first time. Tried a couple the other day pretty yummy. Filled 4 of my 5 tags so far. Still working on my last bow tag but running out of time.



If I'm not fishing then I'm not happy

This was my first time making them and it wasn't as difficult as I thought its was going to be. Picked up some hog casings from Market basket and followed the prep directions on the package. Coarse ground the meat once along with the pork butt. I used a 2 part venison to 1 part pork ratio to help keep them nice and juicy when cooking. Then hand mixed the seasoning in, and ran it back through the grinder through the coarse grinding plate and into the stuffer tube. You want to lube up the tube so the casings slide off better. I just used water but next time I will use vegetable oil. It took me a few times to get the hang of the correct amount of meat to put into the casings. If you make them to big the casings can split when you twist them off. I made them about 8" long and 1/3rd of a lb each. Wasn't sure how they were going to come out so I only did a 10lb batch which gave me 30 Brats. Something I will be making every year from now on for sure.
 
   Think I may invest in a good sausage stuffer. The grinder attachment works fine but I think it would be easier to get a more consistent size out of a stuffer. My grinder is pretty big and fast so you have to work the casing quick to keep up with it.  Its a 2 person operation with the grinder. One to work the casing and one to run the grinder.
If I'm not fishing then I'm not happy
