There are two in Syracuse: one at the State Fair Grounds the weekend of Jan. 24th & 25th, the other is at the Oncenter the weekend of Jan. 17th and 18th. Haven't heard about the Gander Mt. Show yet, but I think it's a safe bet it will happen (usually the first weekend in January).
There is also one in Niagara Falls on Jan. 24th and 25th that will be the largest expo for fishing (open water and ice) in the state. For ice fishing Clam, MakiPlastic, Automatic Fisherman, NYS IPA/Winter Classic, and several tackle shops are already committed to the show, and Scott from Maki will be doing his whole kids set-up. It's going to be geared towards education (the LOTSA school and expo are hosted there) with at least 25 seminars on ice fishing related topics alone, and 75 others on other aspects of fishing and outdoors activities.
