looking for some cusk recipes..

i got about 2 pounds or so of filleted cusk meat and need help with cooking it up..you guys got any suggestions?

My favorite recipe is to cut it up in bit size chunks, then boil it for 5 minutes in sprite or seven-up soda.  Dip the meat in hot melted butter.  The first time we did this we couldn't believe how good it was.

when you boil it in pop, do you dilute with water or just straight pop?

When we cook our burbot / cusk we have done it 3 ways.

1 - Take the fillets dip in your favorite breading and fry in pan, like most fish, until done.

2 - Cube the fillets and boil until done in hot regular or salt water.
While they are boiling mix melted butter with a bit of garlic and keep liquid
When the fish is done dip the chunks in the melted butter.
Around here it's called poor mans lobster and I feel it's even better then regular lobster. ;)

3. Cube the fillets, shake in your  batter and deep fry in hot oil of any kind.
We like to use the canola oils with the omegas in it.
Cook until they area a golden brown.

I have also heard about cooking burbot chunks wrapped in bacon.
I have never tried that one, but it sounds good.

Serve any of these dishes with rice, tater tots / tater gems, french fries or those garlic & cheese biscuits., uuumm ummm good. :)

Darn, now I am hungry. :-\
