Gill cakes. Do your fillets up with salt and pepper( don't overcook!) and when they cool flake them up and mix them with egg, panko crumbs, lightly sauteed onion garlic and celery and whatever other seasonings you want to put in. Old Bay etcetera. then make patties and frie them. DEE LICIOUS!!!!

I dip my filets into seasoned flour, then in a egg/milk wash and back into the season flour...                gotta try the instant potato mix!

I use beer batter. One cup flour one cup corn starch one egg one 12 oz beer and one teaspoon salt. Stirr it all together and dip the fillets and shake off the excess fry it up they are great. I also soak the fillets in beer overnight with some blackening seasoning gives it some nice flavor.

I do an egg wash then a 75/25 mix of seasoned panko bread crumbs and cornstarch most of the time, I also will give some russet potato spears the same treatment. Crushed up Honey Combs cereal makes for a very crispy and sweet crust too. I like the instant potatoes idea.

Saltine crackers crumbled up and add some spikes of your choosing. Def do the egg trick helps the breading stick to the fillets.

I use Drake's deep fry mix two different ways. Wet: add water to mix, pat dry fillets then dip and fry. Dry: Pat dry fillets, put fillets in plastic bag with dry mix, shake it up and fry.
