I'm always doctoring up my homemade recipe.  Here's my current perfection, but i'm always looking for a new one:

-crushed saltines (plenty of salt there, no more needed)
-flour
-garlic powder
-garlic bread sprinkle
-pepper
-oregano (for looks and antioxidants)

If you love your fish, you'll use grapeseed oil.  Will not burn as easily as any other oil, and is the healthiest oil on the market.  Actually lowers your LDL.

Red pepper!  I never thought of that one.  I'll give that a whirl once.  Sounds hot, but i bet the right sprinkle would make that tasty.

I like to use Ritz crackers(or a no-name brand) with season salt and lemon pepper. Fantastic !

ach!  I forgot about lemon pepper too.  This has been a good forum.  No doubt will I have a new tweaked recipe to try.  Does anybody have a batter recipe that they reccommend???  I never liked using batter because it always caked up the fork and made the oil dirty.

i batter dip fish at home, too messy and too much prep on the ice
for shore lunch... i just light toss the fish in a little salt and peppered flour
toss it in the pan with a little olive oil
on the ice I always find less mess is best

as for my batter recipie at home

its simple

white cornmeal, flour, a few eggs, heavy cream and salt and pepper
i generally cook by look and not measurements, usually turns out okay, just make sure it is thick enough that it will coat the fillets nicely

toss the fillets in flour then dip in the batter

drop in a hot fryer basket in 350 deg oil

man you got yourself a fish fry

On the ice I use a beer batter that I make up before hand.
Flour
Cornmeal
Baking Powder
S&P
Beer
Whisk it up and put it in a tupperware container.  Once on the ice, just drop all the fillets right in the batter.  Take them out one at a time, shake off the excess batter, and put them in the oil.

At home it's breading
Flour seasoned with whatever I'm in the mood for -- pepper flakes, S&P, Lowrey's, whatever
Egg wash seasoned the same
Panko (Japanese Bread Crumbs)
The classic three step breading.  Dredge 'em in the flour, dip 'em in the eggs, roll 'em in the Panko, and toos 'em in the oil.  The Panko makes the best breading around.

Here's my favorite batter recipe, which is also great for onion rings, mushrooms, shrimp etc...

1/2 can of beer
salt and pepper
1 tablespoon oil
1 egg whipped
flour to thicken (

heat the oil in a deep pan (cast iron is the best) to about 375. dip the fillets in and fry to a deep golden brown.  having the oil hot sears the batter and does not allow the breading to get greasy.  add your favorite spices if you like. 

PS  When cooking shrimp like this, get a good quality marinara sauce for dipping, like CASA VISCO.  (all of their sauce products are top-notch)  man-o-man, YUM!

Potato breading
Tried alot but the whole family is stuck on this one.
one bowl milk
one bowl flour
one bowl beaten eggs
one bowl Potato Buds(other brands instant potatos will work)
Dip your fillets in order and into the oil they go until they float(2-3 min. max)
salt to taste and pace yourself...you'll want to eat them all

For breading I just grind a cheap bag of pretzels in my blender.  My brother-in-law adds some Old Bay Seasoning.   :P

Try Italian bread crumbs for a change in place of the flour or cornmeal.  Is there a favorite?

Thats what i use the most. I dont eat it much but it is very good this way.

4 c's Italian bread crumbs,dip fish in beaten egg wash,dip in bread crumbs fry till they float,gills,crappies,and perch cook faster than you think,you want a nice moist fillet,not a dried out fried to hard fillet.

Try adding some cajun seasonings, I like Tony Cachares or Zatarines, and Parmesan cheese. Adds a nice little kick.

Crushed Keblar Club crackers, flower, garlic salt, paprika. Milk wash and into the breading then into the fry pan.

I use italian breadcrumbs with a healthy dose of old bay. my mouth is watering just thinking about it lol

I mix corn meal and bread crumbs, half and half.  Salt, pepper, red pepper and some old bay and your set.  Dip in egg, milk/beer, flour and more salt/pepper/old bay first.  It's excellent and you can kepp breaded fish at least a day in the fridge, so it works good on the ice.

Wife can't eat wheat products... so this works well for us.

Dredge in spices (I use Salt, Pepper, Smoked Paprika, but you can use whatever you want)
Dredge lightly in Corn Starch (not meal, starch).

For small fillets like perch, I use Olive oil. Since it burns at a lower temp it browns the coating but doesn't overcook the fish. For just about everything else I use Peanut Oil. All are pan fried so not much oil is used.

Wife doesn't eat fish any other way.
