Perch Sausages

I was making up some breakfast sausage this morning and took a shot at some perch sausage. I was really happy with the recipe I came up with. My Bride even liked it :-\

This has tons of possibilities ;D

6 cups coarse ground perch fillets
1/4 cup Parmesan cheese
1 whole egg
3 tsp sea salt
2 tsp cracked pepper
1tsp cilantro, parsley, chervil, marjoram
2 tsp sugar
1/4 cup canola oil
1/2 cup seasoned Italian bread crumbs
1/4 tsp nutmeg
1/2 tsp cayenne pepper

mix well, stuff in 21mm casings (I use Collagen casings...easy)

Pan fry...enjoy.

Amazing what a man with alot of time can think of, sounds good. I made goose sausage last year and it ate really good.

X2, wow, seems almost sacreligious to do that to perch. mind you, where i come from, perch are hard to come by and moose meat is everywhere....

Sorry, my old laptop bit the dust with a nasty virus. It's hospitalized at the moment. Intensive care...may need a transplant or 2 :-\

I'll be making more this weekend. It was a big hit for breakfast at the restaurant I frequent. I'm gonna tweak the recipe just a little to make them just a bit juicier. I was just playing with the new Kitchenaid attachments making some venison breakfast sausage. But...I think I stumbled onto something with this

I wonder how it would be with pickerel I always make patties out of it.
The sweet meat would be good in this sausage let us know when you perfect the recipe.

You asked for it ;D
 Wash and pat dry 1 1/2 lb perch fillets. Grind with a coarse plate.

Assemble your ingredients (Mise En Place) Right to left, top to bottom
1c. grated cheddar
1 whole egg
1c. seasoned Italian Bread crumbs
Fennel, Parsley, Marjoram, Cilantro
1/4c. sugar
1/3c. canola oil
Cayenne pepper, cracked pepper, celery seed, nutmeg (about a tsp each)
2 tbsp salt

Heineken
Cheese and Triscuits......for the cook....hey, I was hungry....and thirsty ;D

Mix the stuff together

Stuff your sausages

Twist and cut into links

May as well cook some up...a little oil and good heat help. Don't over cook.....it's fish not pork!

Breakfast for dinner

Yeah, you can get the tubes and an open spacer for the grinder attachment. I was impressed with how fast it ground venison and pork for sausage. The stuffer is not the ultimate answer though it works for small batches. I'll probably buy a stainless 5 lb stuffer eventually.

One tip, whole filets work well. For pork and venison, cut it into strips for grinding, lay it out on a pan and season it before you grind. Grind the meats together and you won't have to mix it as much.

The perch sausage has a ton of flavoring possibilities. This batch is really flavorful.

I think it is great, and I saw the sausage stuffer on the Kitchenaid website...only like 13.00, the grinder is 64.00...i'll wait till after Christmas, The Mrs. gets annoyed when I buy her gifts that I use... ??? ??? ::) ;D

Those sound great. I have been making fish cakes using potato flour . Its and old Norwegian recipe.

RG.... another member of this site sent me her personal recipe for Bluegill Sausage (stuffed in a casing) back in March '07. Very similar and very tasty as well. I swapped her one of my favorite homemade venison sausage recipes for it....WK
