Needed a different Recipe...

About a week ago, I needed something different so i made up a recipe for Bluegill Parmesian.

It was AWESOME! Even made a great lunch the next day!

I took a bunch of bluegill filets out of the freezer. Once thawed and rinsed, I dried them off a little and shook them in a ziplock full of italian breadcrumbs. I laid these out in a baking pan and covered each filet with Kroger's Italian Style 5 Cheese shred.

Baked @ 375-400 for about 35-40 minutes.

Served 'em on top of tri-color Rotini with spaghetti sauce.

Yum!!!!  :woot:

That sounds really good!  Did you put anything in the bottom of the baking dish or did you just lay the fillets in there?

That sounds really good!  Did you put anything in the bottom of the baking dish or did you just lay the fillets in there?

Aluminum foil so that chocolate cookies won't have the underlying boquet of gill. I then shmeared the foil with Olive Oil.

Sounds good.  Im on a diet and cant eat bread crumbs so I tried my hand at Parmesan fillets a couple weeks ago.  I mixed that canned parmesan stuff, salt, pepper, and some italian seasoning.  Ran the fillets through an egg mix then rolled in the parmesan mix and fried in olive oil.  Crisped up like breading and was really tasty.

Sounds good but the lenght of time you cooked them seemed a little long. I cook bluegill fillets for less than 30 minutes with potato chips on them. That's another recipe but I am not going to steal your thread - just your recipe ;D

That explains why some of the gills were chewy... :blink:
